Wow. It’s Memorial Day; beginning of summer and HOT. I wasn’t feeling like a heavy dinner, so it was between this or something with carrots. I have a mint plant on my balcony - so thought I would make a watermelon salad. No feta or any other cheese - so this should digest easily. I did two layers and mixed up:
Small chunks of watermelon
Ribbon sliced fresh mint
Fresh lime juice
Himalayan Pink Salt
And, the super-special secret ingredient - a dash of Don Julio Blanco tequila
Perfect light dinner while watching the Bachelorette.
